Raw Vegan Pesto with Angel hair

3 cups spiralized zucchini/squash

2 cups herb salad mix

1 cup raw pine nuts

2 garlic cloves

1/2 cup carrot/celery juice

salt and pepper to taste

sun dried tomatoes

Cut the squash into even pieces that will fit into your spiralizer
Spiralize squash. I use my inexpensive joyce chen model
Strain and press the moisture out of your ‘pasta” with paper towel
Pulse greens and garlic in your processor. I’m still using my 25 year old Cuisinart
Add pine nuts and pulse
scrape sides with spatula
add juice and liquify
Salt and pepper to taste
Chop sun dried tomatoes to garnish on top
serves 4

This one isn’t only delicious, it is easy and affordable.

This recipe makes 28 to 32 ounces of luscious green juice for $3.25    

Recipe:

5 oz kale

1 lb carrots

1 lb celery

1 small lemon

 

pumpkin pie in a glass

2-3 sweet potatoes
1 1/2 lbs carrots
pinch pumpkin pie spice

juice, add spice, shake and enjoy. YUMMY

 

Thai “fried” rice

  • 2 cups cauliflower flower “rice”
  • 1 cup diced carrots
  • 1/2 peas
  • 1/2 red bell pepper
  • 2 scallions (trimmed)
  • 2 tbs nama shoyu, tamari or soysauce
    1 tbs toasted sesame oil
    1 tsp minced ginger
    1 tsp minced garlic

Optional;

1 tsp toasted sesame seeds

1/4 cup of diced celery
